Take 600 g of winter squash, peel it and cut it into pieces, add 2 leeks, 2 peeled potatoes, a stick of white celery and 5 carrots. Add water, slightly salted, and boil for about 2 hours, with a small piece of bacon or guanciale, to give flavour. Remove the bacon and blend. Serve with cubes of toasted bread, lightly seasoned and Marchesi Gondi oil.
