The recipe

Yellow pumpkin cream

Take 600 g of winter squash, peel it and cut it into pieces, add 2 leeks, 2 peeled potatoes, a stick of white celery and 5 carrots. Add water, slightly salted, and boil for about 2 hours, with a small piece of bacon or guanciale, to give flavour. Remove the bacon and blend. Serve with cubes of toasted bread, lightly seasoned and Marchesi Gondi oil.

The recipe is taken from "La Natura in Tavola Fattoria di Volmiano: recipes and secrets". by Vittoria Gondi Citernesi, Polistampa edition.
